My goodness, it has been a while since I’ve posted anything tasty! It’s not that I haven’t been eating, but being in a different country has changed my cooking habits somewhat. Either way, this is pretty tasty: pasta with artichokes, spinach and pesto.
Dried chilli flakes
Cook the pasta according to the instructions on the pack. Meanwhile, heat a little olive oil in a frying pan over a medium heat. Add a pinch each of garlic powder, oregano, chilli flakes and some black pepper, lower the heat and allow to sizzle gently for a couple of minutes. Stir in the artichokes and spinach and sauté until warmed through.
Drain the pasta and add it to the vegetables with a good dollop of pesto, stir to mix and warm the pesto, top with a good grind of black pepper and tuck in xx
