Tonight I wanted to cook something quick and easy and I ended up with this: sweet potato skins stuffed with chorizo and sundried tomatoes. Tasty times. This made about twice as much filling as I needed so you could always treat a friend, for my part I will be turning the extra into pasta sauce tomorrow.
2 sweet potatoes
Chorizo – a 3” chunk
1 red onion
1 clove garlic
Sundried tomatoes – about 10
1 small dried chilli
Preheat the oven to max. Bung the sweet potatoes in the microwave until cooked. Meanwhile, roughly chop the onion and sauté it in a little oil. Finely chop the garlic, slice the tomatoes, dice the chorizo and when the onion just begins to soften add it all to the pan with some dried oregano, paprika and pepper. Crumble in the dried chilli and continue to cook until the onion is soft.
When the potatoes are cooked, slice them in half and scoop out the flesh. Stir it through half the chorizo mixture, adding a spoonful of mascarpone. Fill the potato shells with the mix, scatter over a little grated cheese and bake in the oven for about 10 minutes xx
