I Don’t Like Soup

This is true, it is neither liquid nor solid, it is NOT food. Every so often though, I come across an idea that makes soup not just bearable, but actually enjoyable. Today, that came in the form of sweet potato and sausage soup. Admittedly, it is a mess in a bowl, but a delicious mess nonetheless. This makes enough for two. Om nom nom.

Ingredients

2 sweet potatoes

1 white potato

1 onion (red or white)

1 leek

1 litre chicken or vegetable stock

Frozen spinach – about 4 blocks

3 sausages

1 garlic clove

Paprika

1 bay leaf

Fennel seeds

Dried oregano

Salt & pepper

Olive oil

 

Method

Peel the potatoes and chop them into chunks. Put them in a large saucepan with the half the stock, bring to the boil and simmer until tender, adding more stock as necessary.

Meanwhile heat a little oil in a frying pan and cook the sausages through. Finely chop the onion, leek and garlic. When the sausages are fully cooked take them out of the pan and set aside. Sauté the onion and leek with some paprika, dried oregano, fennel seeds, salt and pepper and the bay leaf. Once they start to soften slice the sausages into chunky slices and add to the pan with the garlic.

When everything is fully cooked, mash the potatoes and add the rest of the ingredients to the saucepan. Add more stock to achieve a good consistency, stir until the spinach defrosts and season to taste. There you have it, one mess in a bowl xx
